Nearby is already a feature on the watch. I was just meaning any watch app function that uses the Geocaching API such as searching for caches, logging, etc etc will need your phone. Hoping in the future this can be improved.
You can use the watch as a stand alone if you use offline, meaning saved caches. But using online features such as nearby do require the iPhone for authentication.
You can delete caches from the List Membership screen, jus swipe to delete or tap edit.
Also, on the cache details just tap the + button on the top right area and choose Add to List.
What location are you searching (provide coordinates if possible)? And are you sure there are Adventure Labs in that area?
Have you tried turning on Filtering and only include labs as a test? I would also make sure to turn off stages.

This is the same size that cache pins have always been, and found caches will show as a smily. Are you meaning pending log fount it caches with a checkmark are hard to see?
Your first screenshot looks like there were two caches on top of each other. The one behind being the one that was a pending log. Please test turning filtering on and off.
This is correct functionality. The Adventure Labs API (way to get data from geocaching.com) does not provide a way to use the map bounds in a search. So when that option is turned on, no labs can be returned.
Do you have some replication steps for searching for a GC and the cache doesn't show and label shows? Do you have the option "Clears map on refresh" off?
